Avocado & Pea Dumplings

This is a wonderfully simple handmade dumpling recipe that is perfect as a light dinner or lunch dish.

Product Used

Extra Virgin Avocado Oil

Ingredients

  • 2 cups of frozen green peas
  • 1 onion ~ chopped
  • 2 cloves of garlic ~ peeled and chopped
  • 1/4 cup Grove avocado Oil
  • Gow gee wrappers
  • 1/4 cup ricotta cheese
  • Salt and pepper

Method

Prepare the pea filling by heating half of the Grove Avocado oil in a pan and saute the onions and garlic for a few minutes, stirring frequently to prevent them from burning.

Add the peas and a slosh more of the avocado oil and cook on medium for 4-5 minutes until the peas are just tender. Add a good grinding of salt and pepper.

Process the peas in a blender till smooth and cool slightly.

Lay the wrappers on a clean board and brush with a little cold water around the edges. Add a teaspoon of the filling to the wrapper and fold together as demonstrated in the video.

Allow the dumplings to rest in the fridge for a minimum of 30 minutes and then cook in lots of boiling salted water. Once the dumplings float to the surface, they are ready.

To serve, heat a bit more avocado oil, add the dumplings to the pan along with the ricotta, and a good grinding of salt and black pepper and serve!
