
Avocanana Bread
Ingredients
- ⅓ cup old fashioned oats
- 1 cup all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¼ cup avocado oil
- 1 cup brown sugar
- 1 ripe, seeded avocado
- 2 very ripe bananas
- ½ cup chopped walnuts
- 2 eggs
- ¼ cup buttermilk
Method
- Line a 9 x 5 x 3 inch loaf pan with nonstick foil and lightly grease the bottom only.
- Preheat oven to 180 degrees.
- Combine dry ingredients in a bowl.
- Cream together avocado, avocado oil and brown sugar with an electric mixer.
- Add eggs one at a time, beating well after each addition.
- Stir in bananas, walnuts and buttermilk.
- Pour into prepared loaf tin and bake for 1 hour and 10 minutes.
- Great with a pot of hot tea.
